Burdock root, also known as gobo, is popular in Asian dishes. Pickled burdock root is often accompaniment to sushi or rice meals. With a pleasantly crunchy texture, burdock has a sweet flavor that’s similar to lotus root, though its taste is distinctive enough to make it worth the trouble of seeking it out and preparing it. The texture of burdock is also unique: meaty and crispy, with a certain chew that’s hardier than that of most root vegetables. Cook Note: It works very well in stir fries, braises, and soups. It can also be peeled, sliced and eaten raw out of hand or on a salad. It resembles a radish with a slight artichoke flavor when eaten this way. It oxidizes very quickly, though, so it’s good to put the raw slices in a bowl of lemon water to prevent browning.
